Easter weekend...

...was filled with family, good food, volunteering, yard work & some more handmades. I made these garden signs from flower shaped wood cutouts, wooden rods, outdoor spray paint & chalk. They cost a total of $3 & turned out very cute. They are little chalkboards that can always be re-used. I put 10 bags of mulch in the natural areas, as well as grass seed & fertilizer & the trees got trimmed. My mom got me the little bird house for Easter. & watermelon salad is my new favorite. A very productive & enjoyable weekend. A lot to be thankful for.

for homemade veggie burgers, very yummy.



Carrot & Zucchini Veggie Burgers

1/2 cup grated zucchini, pressed to remove water

1/2 cup grated carrots

1 small onion grated

2 tablespoons parsley, chopped

1/2 cup 10 grain cereal or ground whole oats

1/2 cup bread crumbs

1/4 cup grated parmesan cheese

1 tsp old bay seasoning

1 tsp dried dill

1/4 tsp paprika

1/4 tsp black pepper

1 tablespoon Dijon mustard

1 tablespoon pesto

2 eggs

1 tbl oil for cooking

4 slices cheddar cheese

Preheat oven to 425. Add zucchini, carrots & parsley

together in a bowl & toss so that it gets all mixed together.

Stir in the cereal, bread crumbs, parmesan &seasonings.

Mix. Add the Dijon, pesto & eggs & blend. Should become

a dough -like mixture. Divide into 4 balls & flatten into burgers.

Add oil to frying pan & place burgers in pan once hot.

Press down lightly, flipwhen golden, 3-5 minutes per side.

Place burgers on cookie sheet & top with cheddar cheese.

Bake until cheese is melted, about 8 minutes.

Serve on toasted rye bread & top with favorite fixings.

...yard pics. Just because i like to see the progression of how things change around the house. The patio is looking much better with the addition of a couple plants. The veggie & herb plants are getting bigger by the day. This weekend...

... i worked on my yard & helped with a baby shower. i planted more fruits & veggies in my garden (watermelon, canteloupe, cucumber & more onions) trimmed the trees & added a couple more plants to my patio. next i have to add mulch & plants to the natural areas in the backyard & extend my patio area. the shower was fun & the cupcake flower pots turned out very cute. until next weekend...

Stuff I'm making...

...for Heather's baby shower. I'll post pics from the party with more detail of the finished product. I think it's all going to turn out really cute. I made her a fabric baby banner. Necklaces for the baby name game. The flower pots are going to be used for a dessert centerpiece. I painted them, added a few layers of ribbon & some moss. The wooded dowels have been wrapped in floral tape & will be used to support the sweets. Excited to see how it all turns out.
